Rosina Makes - Easy Potato Salad


Spring is upon us and what better side dish to have with your picnic or early vegan BBQ is there to have, but Potato Salad!

We promise to publish only super easy recipes on our blog, and this definitely qualifies!



You will need:
750g New potatoes, washed and chopped into your desired size
Follow your heart soya free vegan mayo (approx half a jar)
a bunch of spring onions (we used 8 stalks) 
half a tsp powdered garlic
a quarter tsp hot chilli powder
salt and pepper to taste
half a tsp mixed herbs (optional)




Method:
Wash, and chop new potatoes to your desired size - rinse and boil for approx 10-15 minutes

Whilst the potatoes are boiling, finely chop the spring onions.
In a bowl, scoop out half the jar of mayo and add the seasoning and spices.

Once the Potatoes are boiled, drain and cool down as quickly as possible by placing the potatoes in very cold water. You may have to change the water once or twice.

Once the potatoes are cooled, drain away as much water as possible.

Why not serve this potato salad with our super quick to make 'Sausage' Rolls?

Mix the seasoned mayo, spring onions and potato together and serve with your favourite meals like Pizza, Veggie kebab and burger - all vegan versions of course ;)


We like to make Pizza with Violife cheese and fried tofu chunks, and burgers with Black beans and beetroot! (recipes coming soon!)
