Rosina Makes: Chocolate, Peanut and Salted fudge 'cheesecake'

we won't keep you waiting any longer! Here's our chocolate-peanut-fudge 'cheesecake' recipe!
All thanks to these amazing gluten free vegan products that are available in most large superstores! 


You will need: 
A 6 or 7inch spring form cake tin lined with cling film
1 pack of GFV biscuits - we used sainsburys choc chip cookies 
2 tbsp vitalite margarine
-- 1 pack fabulous freefrom fudge (Asda) - Keep 1 or 2 squares to one side for decoration if you wish.
2tbsp soya cream (if you want it extra gooey like in the photo, use 4tbsp)
Salted peanuts
-- 1 pot plain cream cheeze
We used #buteisland original
100g bar #moofree chocolate
4 tbsp icing sugar
1tsp vanilla extract
Half tbsp cocoa powder
Pinch of salt

🌳Mash cookies into crumbs and stir into the melted marge - press into tin and place in fridge.

🌱On a low-medium heat, melt together fudge and desired amount of soya cream (be patient!) Once melted, pour onto set biscuit base and generously sprinkle salted peanuts on top. Place back into fridge. Melt the chocolate. In a bowl - vigorously mix together the cream cheeze, icing sugar, cocoa powder, salt, vanilla and melted chocolate. Place mixture into the tin and smooth. Decorate with chopped fudge, peanuts and any chocolate you have to spare (optional)
Set in fridge for a couple of hours (if you can wait that long!)
